that if I have Nextcloud Talk, I can add guests to my communications and essentially don't need anything like Jitsi anymore. Sweet!

It appears that I can. I create a 'conversation'. Then generate a link for 'guests'. I have no idea what kind of quality it is. I haven't tested it much at all, yet. I just noticed the function
